Fresh Apple Cake

I made this yummy Fresh Apple Cake for Easter.
4 red apples (with peelings), cubed or sliced
2 large eggs
1/2 c. oil
1/2 tsp. cinnamon
2 c. sugar
3/4 tsp. sale
2 c. flour
2 tsp. baking soda 
1 c. walnuts (optional)
 In a large bowl, break eggs over apples, add sugar, cinnamon, oil and nuts. Mix together with a wooden spoon (not an electric mixer.) In another bowl, sift together flour, salt, and soda. Add to the apple mixture and stir together. It will be very thick. Spread evenly into a 9x12 greased pan. Bake for 55 minutes at 350 degrees F. You can top with Cool Whip or make the following frosting.

Frosting ingredients:
1/2 c. margarine
8 oz. cream cheese
1 tsp. vanilla
1 c. powdered sugar
Mix all together (with an electric mixer) until fluffy.

Funny story about this cake. I got the recipe from a coworker quite a few years ago. She said she and her daughter made this one evening to take to a school bake sale the next day. Well, after they got it all mixed, one of them dropped the pan (before baking) and spilled it on the floor. They did not have enough money to go to the store and buy more ingredients so they just scooped it up off the floor and baked it.  LOL! Beware of bake sales!

Thanks! I don't have an Apple Crisp recipe. This pretty much is my go to apple recipe.
